Chocolate, Pear & Almond Recipe

Ingredients
To make the Pears
- 4 Just-Ripe Pears peeled & quartered
- 35 g Unsalted Butter
- 2 tbsp Soft Brown Sugar
- 1 Orange finely zested
To make the cake
- 150 g Unsalted Butter plus little extra for greasing
- 100 g Ground Almonds
- 100 g Self-Raising Flour
- 25 g Cocoa Powder
- 150 g Caster Sugar
- 2 Eggs
Instructions
- Gently melt the butter for the pears over a medium heat in a frying pan. Add the brown sugar and orange zest. Stir until the sugar has dissolved. Add the pears and cook for a few minutes until tender – make sure you turn frequently to avoid them catching in the pan.
- Pre-heat oven to 180°C / 350°F / Gas 4
- Grease a 20cm springform tin and line with baking paper.
- Mix the ground almonds, flour and cocoa powder.
- Beat the butter and sugar together until very light and fluffy – use a hand held whisk or mixer to make life a little easier! Beat in the eggs one at a time adding a little of the dry almond, flour and cocoa mix with each.
- Fold in the rest of the dry ingredients. If required, stir in a little milk to create a soft dropping consistency.
- Place the chocolate cake mix into the bottom of the tin and arrange the pears on top. Finish with the buttery, orange juice if there is any left.
- Bake in the centre of the oven for around 45 minutes or until a skewer comes out clean.
- Leave to cool in the tin for a little while before turning out.
