Chocolate, Pear & Almond Recipe

To make the Pears

  • 4 Just-Ripe Pears peeled & quartered
  • 35 g Unsalted Butter
  • 2 tbsp Soft Brown Sugar
  • 1 Orange finely zested

To make the cake

  • 150 g Unsalted Butter plus little extra for greasing
  • 100 g Ground Almonds
  • 100 g Self-Raising Flour
  • 25 g Cocoa Powder
  • 150 g Caster Sugar
  • 2 Eggs


  • Gently melt the butter for the pears over a medium heat in a frying pan. Add the brown sugar and orange zest. Stir until the sugar has dissolved. Add the pears and cook for a few minutes until tender – make sure you turn frequently to avoid them catching in the pan.
  • Pre-heat oven to 180°C / 350°F / Gas 4
  • Grease a 20cm springform tin and line with baking paper.
  • Mix the ground almonds, flour and cocoa powder.
  • Beat the butter and sugar together until very light and fluffy – use a hand held whisk or mixer to make life a little easier! Beat in the eggs one at a time adding a little of the dry almond, flour and cocoa mix with each.
  • Fold in the rest of the dry ingredients. If required, stir in a little milk to create a soft dropping consistency.
  • Place the chocolate cake mix into the bottom of the tin and arrange the pears on top. Finish with the buttery, orange juice if there is any left.
  • Bake in the centre of the oven for around 45 minutes or until a skewer comes out clean.
  • Leave to cool in the tin for a little while before turning out.
